Lemon meringue pie


  • ¼ cup cornstarch
  • 3 Tbsp flour
  • 1 ¾ cup sugar
  • ¼ tsp salt
  • 4 egg yolks, slightly beaten
  • ½ cup lemon juice
  • 1 Tbsp grated lemon peel
  • 1 Tbsp butter
  • 2 cups water


  • 4 egg whites
  • ½ cup sugar
  • ¼ tsp cream of tartar


In saucepan, combine cornstarch, flour, sugar, salt. Add water. Stir. Bring to boil. Boil 1 minute. Stir in egg yolks. Cook on low for 5 minutes. Remove from heat. Add juice, peel, butter. Pour into pie shell. Preheat oven to 400 F.


Beat whites with cream of tartar until frothy. Gradually beat in sugar. Beat at high until stiff peaks form. Spread over pie. Bake 7 to 9 minutes.
